Jiffy Mix recipes

Growing up in Alabama we used Jiffy mix quite a bit. If you never have had Jiffy before, they are best know for their sweet cornbread. One day, I came across their website. You can actually get a free copy of their recipe book containing recipes for all of their mix types. 

Here are some of my favorite ones:

Breakfast Quiche


Mint Chocolate Chip Ice Cream Brownie


Cheese Biscuits



All of these (including some of the recipes in the book) are easy to make. I will be making one or two of these this weekend for a party at my friend's house. It will be the first event/tablescape that I have put together myself on a budget. I am super excited about it and will post pictures next week of it. 

Has anyone else tried Jiffy mixes or have a favorite recipe that will work with it?

Bark Thins Review

I have definitely have been bad about posting regularly again (you can thank school for that). I have a bunch of post coming up so y'all should stay tuned in. Anywho, a while ago when I got my Influenster vox box I received a coupon for a bag of Bark Thins. I know that they had been out for hot minute but I have never tried them before so I decided to give them a try since they were free. 

And I'm glad I gave them a try. After looking at all the options that they had on the shelves at the Target I went to I decided on the one above: Dark Chocolate Pretzel with Sea Salt.

One of the that I like about the packing was that it was easy to put in my purse or tote bag. The bark is easy to eat since it's broken into pieces so you can choose which size piece you want instead of having to break the pieces like with some other ones. 

In the future I am definitely trying some of the other flavors that they offer including:

Thoughtful Thursday

I have been the worse at blogging for the last two weeks.  School (mainly Organic Chemistry and Biometry i.e. statics) has been kicking my butt. Here are some thoughts for today. I will be back blogging regularly sometime soon.

Flavored water combos

I hope everyone had a fantastic Labor Day weekend/Unofficial end of summer. I worked all weekend so BOO!!!! Anyway since I am still recovering from having my bottom wisdom teeth taken out I have been drinking a good amount of water. Usually, water is the only thing I drink unless I am drinking something as a mixer for a drink.

I came across article on The Food Network about flavored water and start getting some great ideas. The article had a number of fruit and vegetable flavor combinations. In case you didn't know already water can be a great mixer for drinks (usually with vodka). I love that they came up with different parings beside the usual cucumber, lemon, and lime infused waters. I might try some of these flavors out sometime this fall:

Taco Salad

Sorry I have been M.I.A for the last couple of days. I am still trying to do homework/sleeping/read all my textbooks after getting my other wisdom teeth out Friday. Anywho, about a week or so ago I was in the store (Kroger as always) and for seem reason I was wanting to make tacos. I love Mexican food like you wouldn't believe. There was a point where I use to eat it about three to four times a week.



Originally, I was going to make tacos but ended up buying these tacos flats that I used to make a taco salad with. I usually make a taco salad one of two ways: as a regular salad that I end up putting taco meat on top of with salad dressing and the other way is how they do it at some restaurants where they use the tortilla bowls. 

Ingredients
2 lbs ground turkey
1 packet taco seasoning (from Fresh Market)
1 can Fiesta Style Corn
1 cup mild salsa
8 Ortega fiesta flat bottom tortilla shells
1/2 cup Mexican Style shredded cheese
1/2 white onion, chopped


Instructions
1. Brown the turkey meat in a heated skillet.

2. Drain turkey meat. Add chopped onion and 1 can of fiesta corn.

3. Preheat oven to 350 (to bake the tortilla shells)

4. Add taco seasoning packet (following instructions on packet). Simmer the meat and seasoning for 5-7 minutes on low.

5. Stir in 1 cup mild salsa. Cook mixture for another 5-7 minutes on low.

6. Place the tortilla flats on an ungreased baking sheet. Cook according to box (think it was 5 minutes).

This is the end result of what I made.



I added lettuce, tomatoes, and cheese on top. In the end, I put Hidden Valley Fiesta Ranch on it. If you have not tried this dressing yet, I would highly recommend it. 

One things I am going to start doing is posting one to two recipes a week whether it's a drink one or food. Since its' getting to be that time of year around these parts (4 more days and counting YAY!!!) I am going to be making more food and drinks.
