Thoughtful Thursday

Happy Thursday!! Its' hard to believe that this is the last Thursday of March & April is right around the corner. With that being said, that means a couple of things for me: school is almost over (this first semester of graduate school was a struggle), time to plan a few adventures (with my first one being the first weekend in April for a 5k), and most importantly planning my birthday trip. I know it's like a little over two and half months away but a little planning never hurts.  
Here are some thoughts for this Thursday to help past the day by a little quicker:











I'm glad it's the weekend because I finally catch up/finish my research study all with some other task I need to get done. Peace & Blessings all. Everyone have a great Thursday!!

Healthy Lunch Ideas

Happy Spring!!! It's hard to believe that Spring is here considering that it has felt like it for the last month or so. No surprised here, I have been swamped with projects #gradschoollife. Anywho, with me being so busy, I have been eating out ALOT lately (the way my clothes are fitting are a clear indication of that) since I have not had time to cook.
One thing I have figured out is that making lunch is much easier than making dinner. The last couple of days I have been making dinner and eating leftovers for lunch. If I had time, I would make a few of these great lunch recipes from Eating Well:

 I have a major little obsession with quiche. Eventually, I want to try my hand at making a crust from scratch (the only time I ever did it, it was a bit of a disaster). I like this Broccoli, Ham, & Cheese quiche because it combines two of my favorite foods: broccoli & cheese. 


Pasta is a great option (in moderation). It is easy to mix different add-in items to like in the Greek Pasta Salad. I usually add Feta cheese & them a few different types of vegetables, nuts, or fruit. I try to make it as colorful as possible.


As I said above: I LOVE quiche, broccoli, & cheese. Broccoli-Cheese Pie is pretty much a crustless quiche. There is no need to explain why I like this "pie".


The Chicken & White Bean salad is a different take on a salad in my opinion. By adding the beans, you are getting a great source of fiber & protein. Putting it on a salad gives it extra color & crunch. When I decide to make this I might some more vegetables or change up beans.



One great way to use ravioli you have left over is to put it in soup. The Ravioli & Vegetable soup combines two great meals by themselves into something that is sure to fill you up.

Mediterranean Pasta Salad

Hello all!!! I have definitely been M.I.A for the last couple of weeks. In all honesty, it has been a mixture of writer's block & being too busy/finding time to write. I was going to share this recipe in February but I did my disappear so, I am going to share it now. 
For those who know me pretty well, they know one thing: I am obessed with Taziki's . If you have never been there, they are a Mediterranean cafe that serve salads, sandwiches and other foods items. My go to food item there is the chicken salad & company:
Beside chicken salad, you get to choose two others items that include pimento cheese, fruit salad, tomato & cucumber salad, & pasta salad. I decided that I would try making the pasta salad since it seemed so easy & is pretty healthy. I did add my own twist to it as I always do.

Ingredients
1 box of veggie pasta
1 4oz container of feta cheese
1 container of cherry tomatoes (cut down middle of each one)
I cucumber (peeled & sliced in fourths)
Salt & Pepper
Onion Powder


Instruction
-Cook pasta according to box instructions (I cooked mine for 10-12 minutes).
-While the pasta is cooking, wash & cut tomatoes in half then the cucumbers into fourths.
-When the pasta is done, drain the pasta. Then, run pasta under cold water to cool.
-Once the pasta is cold, add vegetables, spices, cheese, & dressing ( I used 1/3 cup) into bowl, tossing to mix.
The end result is:
I have been trying some different things with is such as changing out cheeses, adding meat, and dressings. Which brings me to the new Wishbone EVOO dressing. I would highly suggest trying it if you have not yet. I have given up cream dressing for lent so I have been trying to find new options. I like this one because you can taste all the spices & flavors in it along with it being super light. 
This would be a great dressing for marinating chicken in or in other cold salads.
