Thoughtful Thursday

Happy Thursday!!! My finals start next week so I will be spending the next couple of day finishing up the few projects/studying that I have left. Here are some thoughts for this busy Thursday:

Apple and grape ranch chicken salad

Over the past few week, I have been busy and trying to not spend any money, I have been cooking at home more. I made this chicken salad for dinner one night when I was in the mood for something easy. I like adding my own twist to recipes so in this chicken salad I added grapes and apples:

Ingredients
7 Chicken tenders (fresh)
3 celery stalk
2 1/2 cups red seedless grapes
1 granny smith apple
1 packet ranch dressing mix
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp black pepper
1 cup mayonnaise
Estimated time: 15 minutes

First, cook the chicken tenders the George Foreman. Place on plate once taken off grill. Shredded chicken and place them in a bowl.


While the chicken cooked, go ahead and diced the celery and cut the grapes into halves.



Once the chicken cooled, add the grapes and celery together with the chicken.


Before adding the mayonnaise, add one pack of ranch powder and all the seasoning into the mixture. Stir well. 

This is the end product. I am one of those weird people that would rather have a snack for dinner than an actual meal sometimes. This was great since I wasn't super hungry and in a time crunch that night.

Fitness Tuesday

Hi all!! I've been super busy but I have done some recipes for the blog and haven't gotten around to posting them yet. This fitness Tuesday I  am here with another smoothie recipe. This one is different from the first one that I posted in that this one has more of a variety of fruit besides your usual strawberries and triple berries. This is what I used this time in the smoothie:

Ingredients
1 cup triple berries (frozen)
1 cup strawberries (frozen)
I always use frozen fruit. It makes making smoothies easier since you cut out the adding the ice step.


Everyone has their opinion on apple cider vinegar. I drink it in cranberry juice (the juice is half diluted of course) and I drink it in water with lemon juice added. If you never tried it or just don't care for the taste I suggest adding it to a smoothie with a number of different flavors. Doing that, makes the vinegar taste not as strong.

I bought this juice right when it came out and I love it. One reason I bought it was because the sugar content ranges from 4g per serving (which is an 8oz glass) to 7g per serving. Out of all the juices I have looked at on the market (which is a lot) that is the best one that I have seen sugar wise.

1 banana
1 apple (sliced with peel)
I use Greek plain yogurt for you guessed it: the low sugar content. There is another brand the has a low sugar content on the market. To tell you the truth though, I usually base it on which one is on sale and the store I shop at alternates between the two being on sale. 

Mix all the ingredients into blender (I use a Nutribullet). Pulse until all are blended will. Pour smoothie into glass.

I ended up making too much so I had two glass full of it. If that happens, usually I will freeze or refrigerate the rest for the next day.
Does anyone make smoothies in the morning or just because??

At the moment I am covered in books, papers and handouts for my last projects and finals of the school year. I do have some recipes that I was going to post this week that well be on here next week because, drum roll please......I have them pre-scheduled!!!! Weird that I actually did that for once, right? Fitness Tuesday

Hi, I'm Navia and I'm a blogging slacker. Okay..... it's more of a "I have so much school work due than I know what to do with". I really am going to get back into regular posting, which for me was four days a week. I have even been slacking meaning not getting that much sleep as well. My sleeping or non lack of sleeping pattern has been crazy since spring break. This week is almost over!!! This week more than any other I have been a busy bee. At the moment, I am trying to juggle all of the things I have going on so, hopefully (fingers crossed) I'll have some food and drink recipes up. Fitness Tuesday

I am still completely buried swapped with case studies and test for school so today's post is going to be somewhat short. I was going to post this healthy apple and peanut butter recipe I made the other day. Since I haven't had time to upload the pictures yet though, here are some recipes for snacks that include fruit and peanut butter in them using Skippy peanut butter:











I saw some other ones that I am interested in trying to make. I have a whole bag of peanut butter powder to use so, the next couple of weeks are problem going to have to do with peanut butter.

Fitness Tuesday

With the weather starting to warm up outside (it was 77 here in Alabama yesterday and the mid 60s today) I drink more water than usual. I already drink more water than the average person to begin with so it's not that big of a deal for me to add a few extra glasses. 
I have been trying to figure out a way to liven up just plan water recently. Here are a few recipes from Pinterest that I am considering trying:






And in case you are trying to figure out what to put in the water or how long to let it infuse, here is one that is helpful to make that decision:


I know that there are a few brands out there that sell infused water (personally, Hint is my go to one). When I have the time is who I usually make my infused water. Is anyone else starting to drink or make infused water?

Margarita Lime Chili's Bold Skillet Sauce

With the weather getting warmer, I am trying to get back into cooking/baking/ making drinks again. A while ago, I did a post about the Citrus Mango Chili's Bold Skillet sauce from Chili's Sauces at Home that I bought. Recently, I finally made the other one that I bought: 


All of the sauces are fairly easy to cook (even for those non-cookers out there). All you do is cook the meat, add the sauce to the skillet, and let it shimmer for a few minutes. 


The end result was this.

The chicken was placed a top of  a wild rice blend. I like using wild rice because it tends to have more flavor than regular white or brown.
Between the two, I think I like the Margarita Lime better than the Citrus Mango. In the Citrus Mango, it was an interesting blend of both flavors. With the Margarita Lime, I definitely tasted more of the Margarita flavor then the lime. I think the Margarita flavor went better with the rice then the Citrus.

I would suggest if anyone tries them to use the sauces in fajitas. Both of them might test better with peppers, onions and some other items mixed with it. Has anyone else tried these yet???
