Happy Christmas Eve all!!!! This is going up later than usual due to the ridiculous weather that was going on down here in Alabama last night. I was going to type it last night but, I didn't want to risk the whole getting struck by lighting thing. Considering, when I was driving home I saw a tree split in two didn't want to risk it. Fitness Tuesday

Hi all. I spent yesterday recovering from all the Christmas parties I went to the last three/four days. This is fitting since the year is about to end in a little over a week. Starting this week, I am going to post some exercises that I have done from Pinterest as well as some of the fitness brands and foods I like/tried. With that being said, I know that there are days when I can't make it to the gym or I am just too lazy to go (we all have those days). Here are some that are of the ones that I have tried lately:

Since the school gym is closed for the holidays, I signed up for Pilates classes. Yesterday morning I went to an express leg & glutes class. To say I'm hurting is an understatement. If you ever get a chance to do a class on a reformer I highly recommend it.

Stress release during the holidays

As we get closer to Christmas, I know that everyone is super busy and a little stressed out. Between school, work, and life I have been under a great deal of stress lately. I know that I have went to the gym/worked out five days last week and I also tried out a Pilates for the first time on a reformer. It has helped a bit.

For everyone who doesn't have time to go to the gym to relieve some stress, here are some exercises that I found to do at home when you have some free time:

During the holidays or any stressful time in life, I find that exercising works wonders. Does anyone have some exercises or hobbies they like to do to relieve stress during the holidays and in general?

Bacon Cheddar cheeseball

For anyone who has been reading the blog for a while knows that I love food in particular appetizers. One day when I was on Facebook (which I get on every blue moon)
I saw a video of someone making one of these cheeseball. In all honesty, I have never eaten a cheeseball before due to the fact that most are covered in pecan or walnut. I did add my own twist onto this recipe to make it my own.

Ingredients
1-8oz container whipped onion and chive cream cheese
1-8oz container whipped plain cream cheese
1-8oz extra sharp cheddar
1-8 oz bag Italian five cheese blend
1 1/2 boxes of microwave bacon
8oz green onions
1tsp pepper
1tsp garlic powder

1: Shredded the block of extra sharp cheddar cheese.

2: Take bacon out of bag and place on plate. microwave for 1:30 or until crispy. Cool.

3: Empty both container of cream cheese into a large bowl. Let sit for 5 minutes or until softened.

4: Add half of the Italian and extra sharp cheddar cheese to the bowl. Place the rest of the cheese on a plate.

5: Clean and chop green onions. Put in bowl with cream cheese.

6: Chop the bacon adding half to the bowl along with the pepper and garlic powder. Add the rest to the bacon pieces to the plate with the cheeses.

7: Stir the ingredients together. Then start to form the cheese into a ball.

8: Once the in ball form, roll the ball in the bacon and cheese mixture, covering the whole ball.

9: Refrigerate for 2 hours until ready to serve.

Sidenote: I ended up cutting the ball in half due to it being the size of a 2 lbs medicine ball.
I made this for the SEC championship party I went too. I took this and my Citrus Salad drink (I made it with champagne this time) and both were a big hit. I am making both for other parties that I plan on attending.

Libby's Pumpkin Cheesecake

I hate to admit it but I jumped on the pumpkin food train. For Thanksgiving, I decided to make a Libby's Pumpkin Cheesecake instead of a cake this year.

I have to say that this was extremely easy to make even for a person who is "cooking challenged".I decided to make the cheesecake in cupcake size since it was easier to transport.

Ingredients
-Contents of box: 1 can pumpkin,1 pack of filling mix, and 1 bag of graham cracker crumbs
-8 oz cream cheese
4 tbsp butter

Instruction
1:Melt the 4 tbsp of butter in microwave. Combine the butter with graham crackers. Push some of the graham cracker in each of the mini cupcake tins.

2:Combine pumpkin, filling mix and cream cheese in a bowl.

3:Mix all the three of the ingredients together with a hand mixer until smooth.

4:Spoon filling into each mini tin.

5: Bake for 15-18 minutes.

6:After cooling, top with with topping and sprinkle cinnamon on top.
They ended up turning out better than I though they would. I have already bought another box to make for Christmas.

Have a great day!!!!

All opinions about the product shared are my own.

King's Hawaiian Dressing

For the next week, I will be posting some of the foods that I made for thinks giving. I tried a couple products that I have never used since I usually make pies and my stuffing from scratch. A few weeks before Thanksgiving I was in the store and saw that King's Hawaiian rolls now make a stuffing. Of course my being me and always trying products that are labeled "new" I had to by it.
One of the things that I find great about this product beside it being well seasoned was that the bread wasn't super hard like some stuffing mixes. They also have the recipe for making it as stuffing as a side and in the turkey. Being in Alabama, I ended up making it as a dressing with Cornish Hen meat.

Here are the instructions and ingredients:

Ingredients:
One bag King's Classic Stuffing,
1 cup onion, chopped
4 celery stalks, chopped
1 1/4 cups chicken broth
1 1/2 cups Cornish hen, shredded
1 tsp pepper
1 tsp garlic powder

1: Place the chopped in onions in a food processor.

2: Place the onions and celery mixture in a pot and let saute' for 2-3 minutes.

3:In a bowl, empty stuffing mix, onions, celery and the spices.

4:Add the shredded Cornish hen and chicken broth. Mix well then place in a casserole dish.

5:Bake for 30 minutes .

The verdict was that it was pretty good. It was something different for me since I usually make my own bread crumbs and add my own. I will most likely us this for Christmas since it is easy to make in a time crunch.

All statements made are my personal opinion.
