Recipe: Fiesta Rice Bowl

      A few weeks ago, I made this for dinner when we were all still under stay at home orders. I made this post but decided not to put it up with everything else happening. So, today is the day that I'm going to share it with you all. This recipe came in handy when I was trying to figure out what to make with some of the items I had in my pantry that I did not want to eat alone. 


Here is how I made it & the ingredients that I used the bowl.
First I cooked 1 lb of local, grass fed, lean ground beef along with 1 & 1/2 cup of  frozen green bell peppers in a pan. Once completely done cooking, I drained the mixture.

I then added one can of tri-blend beans. The beans in the mixture are dark red kidney, pinto, & black beans. I drained the beans then added them.

I let the above cook for 5 minutes then I added one pack of frozen corn in the blend.

This is a wild & basmati mix the I like. Here is the brand that I used. You microwave it for 2 minutes then fluff with a fork.

I then added a small can of salsa & taco seasoning that I had. Stirring it until blended well.

Here is end result.


I put a plain Greek yogurt instead of sour cream on top as well. If you can also make this meatless, leaving out the beef  & adding more vegetables to it. Actually, I may make that sometime in the next week or so to share.
